Healthy Pancakes | Monday Motivation

So in honour of tomorrow being Pancake Tuesday, I thought this week's Monday Motivation post would be all about allowing ourselves to have a treat, while also adding a few healthy items in to the mix! The recipe I use is by Sprinkle of Glitter aka Louise Pentland

What you need: 

110g plain flour
Pinch of salt
2 eggs
200ml milk & mix with 75ml water
50g melted butter

PLUS YOUR TOPPINGS - Fruit is great for this if we are wanting to still be a bit healthy, but hey you can go all out with this treat and use chocolate sauce or syrup if your heart desires.

What to do: 

First sieve the flour and salt into a large bowl, then crack the eggs into the flour and begin whisking. 

Then gradually whisk in your milk and water until the mixture is smooth, then you can add your melted butter. 

Take some extra butter and melt into a pan, when it's really hot start making the pancakes, by pouring two spoonfuls of the batter into the pan. 

Once the underside is cooked, flip (my favourite part) then cook the other side. 

Once the cooking is done plate up your pancakes and add your toppings along with any sauces of choice and voilaaaaa...
